Healthy Veggie Sandwich Recipes
Use your leftovers to create the greatest vegetarian sandwich ever by adding texture, flavor, and color. Eat the rainbow!
Ingredients:
Scallion Cream Cheese
- 2 oz. cream cheese
- 1 green onion, sliced
- 1/2 tsp lemon juice
- 1/8 tsp garlic powder
- 1/8 tsp dried dill
- 1 pinch salt
- 2 oz. cream cheese

Sandwich
Instructions:
- In a small bowl, whisk together the ingredients for the scallion cream cheese (I did this with a fork).
- Toast the bread very lightly. On one side of each slice of bread, spread the cream cheese.
- Arrange the veggies on top of the bread and seal. Cut in half and savor.
