Healthy Veggie Sandwich Recipes

 Use your leftovers to create the greatest vegetarian sandwich ever by adding texture, flavor, and color. Eat the rainbow!

Ingredients:

Scallion Cream Cheese

  1. 2 oz. cream cheese
  2. 1 green onion, sliced
  3. 1/2 tsp lemon juice
  4. 1/8 tsp garlic powder
  5. 1/8 tsp dried dill
  6. 1 pinch salt


Sandwich

  1. 2 slices hearty bread
  2. 6 slices cucumber
  3. 2 slices tomato
  4. 1 handful spinach
  5. 1 carrot, shredded
  6. 1/2 red bell pepper
  7. 1 handful alfalfa sprouts
  8. 1 pinch salt
  9. 1 pinch pepper


Instructions:

  1. In a small bowl, whisk together the ingredients for the scallion cream cheese (I did this with a fork).
  2. Toast the bread very lightly. On one side of each slice of bread, spread the cream cheese.
  3. Arrange the veggies on top of the bread and seal. Cut in half and savor.
